Aromas of plum jam, chocolate cake, and rain-soaked adobe bricks are just the opening salvo! This is followed by flavors of oven-roasted red onions and brown sugar roasted pecans. The firm texture with supple tannins can easily stand up to richer foods, like slow roasted pork shoulder with mission figs, fennel and star anise, served over mashed Yukon gold potatoes.
